What I Eat In A Day For A Summer Glow Up | Balanced Healthy Eating

Welcome to my first ever what I eat in a day post. In these blog posts I will show you what a healthy balanced diet can look like for various goals. I personally focus on foods that are good for my (mental) health, hormones, glowing skin and my many glow up goals. Before I’ve struggled a lot with food for years. I know how hard it is to find a good healthy balance when it comes to eating. So my hope is that these posts show you how easy and yummy it can be to take good care of yourself through foods.

Keep in mind that these days are a snapshot and every day looks different. Please also keep in mind that you need to always eat when you’re hungry and that you shouldn’t see these posts as a blueprint but merely some inspiration!

Breakfast

Green Smoothie + Edamame Dip Toast with Avocado, Cucumber and Sriracha Mayo

Every morning I start my day with a smoothie. It’s super easy to make and I like to add a lot of healthy ingredients that support various of my glow up goals. For example sometimes I add a little protein powder or collagen powder for my fitness goals and clear, glowing skin. Chia seeds and hemp seeds are also a good option.

Today’s smoothie was a mix of banana, frozen mango, a little frozen pineapple, fresh spinach and coconut milk. I wanted to keep it fresh and easy today. <3 My smoothies are usually big! About 400 to 500ml of smoothie. They keep me full and are great to hydrate your body and skin.

Personally for me, a smoothie is not enough to start my day. I always add something savory. Today I made three sourdough pumpkin toasts with edamame dip topped with avocado + sriracha mayo and cucumber.

LUNCH

Stir – Fried Veggies and Tofu + Berries Snack

Honestly I’m really a brunch girl. I love having breakfast and then also having brunch a few hours later lol. But I also love having veggies with some protein! Another example of a lunch option for me is stir-fried veggies with tofu. Sometimes I eat it just like this, or I heat up leftover rice from last nights dinner and eat it like that.

The veggies I used here are carrot, pak choy, shimeji mushrooms and sprouts. I added tofu and for the sauce I usually use vegetarian oyster sauce and soy sauce.

Between lunch and dinner I usually have a little snack. Mostly some fruit and nuts. Especially berries! On this day I chose strawberries and raspberries are a great way to get in those antioxidants and they are amazing for your skin because of their vitamins and minerals.

DINNER

Shrimp Poke Bowl + Shrimp and Avocado Sushi

My boyfriend and I have sushi day almost weekly on the weekends. Every time I order the same exact thing! A shrimp poke bowl with white rice, fried shrimp, pickled cucumber, edamame beans, corn, cucumber and avocado. I always top it with Japanese Kewpie mayo, loooooove Kewpie mayo. Then the sushi we order varies sometimes, but it’s mostly shrimp and avocado rolls. My boyfriend is vegetarian mostly so we always order a lot of avocado sushi because it’s his fav.

After I eat the poke bowl I’m usually ful already so I like to save the rest of my sushi for a movie night a few hours later!

To look and feel my best this summer and reach my glow up, I really try to cook more fresh foods and home or order healthier options. Now I know fried shrimp isn’t the healthiest but it’s not about being perfect everyday! I feel my best when I try to eat about 80% healthy and 20% whatever I want. And honestly, there are a lot of days where it’s more 20% healthy and 80% what I want! I’ve been really focusing on not feeling too hungry and nourishing my body with healthy, energizing foods so I can workout and enjoy my days. <3

Keep in mind that this is just an example day. Always eat when you’re hungry and always see food as fuel.
